This is a quick and healthy egg salad recipe.
INGREDIENTS

2 hard-boiled eggs, chopped
·
4 hard-boiled egg whites, chopped
·
1/4 cup plain Greek yogurt, 0%
·
1/2 tsp. curry powder
·
2 tbsp. chopped pistachios
·
2 cups baby arugula
·
salt & pepper
METHOD
Mix together eggs, egg whites, Greek yogurt, curry powder,
and pistachios. Add salt and pepper to taste. Lay over a bed of arugula. Or
make a sandwich. Spinach can be used in place of the arugula.
