Spanish Omelette with pan-fried tomatoes

Ingredients

·         1 packet Black Pepper Sauce (powder)
·         1 tablespoon olive oil
·         250 g cherry tomatoes
·         4 eggs
·         Salt and pepper to taste
·         200 g feta cheese, cubed
·         Small handful of chopped parsley

Preparation

1.       Preheat the oven on grill setting.
2.       Prepare the black pepper sauce according to instructions.
3.       Heat oil in a large oven-proof frying pan and lightly fry the tomatoes until tender.
4.       In a bowl whisk together the sauce, eggs and seasoning.
5.       Add mixture to the tomatoes in the pan.
6.       Scatter with feta cubes.
7.       Reduce heat and cook for 5-10 minutes until firm.
8.       To finish, grill for 3-5 minutes until golden brown.
9.       Scatter over the parsley and cut into slices and enjoy!
