Vegetable Paella

Ingredients

·         1 cup raw rice
·         4 cups vegetable broth
·         2 onions peeled and thinly sliced
·         4 cloves garlic, crushed
·         3 green peppers, seeded and thinly sliced
·         2 tomatoes sliced
·         ½ tsp. salt
·         1 bay leaf
·         ¼ cup olive oil
·         2 cups green peas slightly steamed
·         1 cup sliced black olives
·         400g tin pimentos sliced
·         2 cups cooked chickpeas

Preparation

1. Cook the rice in the broth until the liquid is absorbed.

2. In a saucepan, sauté the onion, garlic, peppers, tomatoes and bay leaf in the olive oil until the onion is tender.

3. Add the peas, olives, pimentos and chickpeas and heat through.

4. Place the rice in a casserole dish and spread the vegetable mix on top.

5. Garnish with the almonds.

Serves 6.
