Mutton Hodgepodge



BRAAIS, BEERS AND BIKES



Ingredients

·         1 tbsp. cooking oil
·         500 g breast of mutton, cubed
·         500 g beef, cubed
·         2 medium onions, chopped
·         2 cloves garlic, crushed
·         1 tbsp. salt
·         ½ tsp. black pepper
·         ½ tsp. chopped fresh rosemary
·         ½ tsp. chopped fresh thyme
·         1 bay leaf
·         1 x 410 g tin of chopped tomatoes
·         500 g potatoes, peeled
·         5 pickled onions, peeled
·         5 medium carrots, cubed

Preparation

1.       Heat oil in a pot, add meat and brown.
2.       Add onions and garlic and fry until soft.
3.       Add herbs and spices and fry forr 2 minutes.
4.       Add tomatoes, cover and simmer for two hours.
5.       Add remaining vegetables and simmer until potatoes and carrots are tender.

Serve with rice and side-salad.
